Chicken Kebabs in Yogurt Marinade

Ingredients:

  • 1.5 lbs (700g) chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground paprika
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • Wooden or metal skewers

Optional Garnishes:

  • Fresh cilantro or parsley, chopped
  • Lemon wedges
  • Sliced red onions
  • Cucumber or tomato salad

Instructions:

1. Prepare the Marinade:

  • In a large bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, paprika, turmeric, cinnamon, and cayenne pepper (if using).
  • Season the marinade with salt and pepper.

2. Marinate the Chicken:

  • Add the chicken pieces to the marinade and mix well to ensure the chicken is evenly coated.
  • Cover the bowl and refrigerate for at least 1 hour, or up to 6 hours for more intense flavor.

3. Preheat the Grill or Oven:

  • For grilling: Preheat your grill to medium-high heat.
  • For baking: Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil or parchment paper.

4. Prepare the Skewers:

  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece.

5. Cook the Kebabs:

  • On the Grill: Grill the kebabs for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (74°C).
  • In the Oven: Place the skewers on the prepared baking sheet and bake for 15-20 minutes, or until the chicken is cooked through and slightly golden. You can also broil the kebabs for a few minutes to get a bit of char.

6. Serve:

  • Remove the kebabs from the grill or oven and let them rest for a few minutes.
  • Garnish with fresh cilantro or parsley and serve with lemon wedges.
  • Accompany with sliced red onions and a cucumber or tomato salad if desired.
